2 gal. grape juice
2 gal. apple juice
4 lbs. sugar
2 cups lemon juice
2 campden tablets, crushed
Yeast nutrient
1 pkg. wine yeast


  1. Put all the juice into a 5 gallon carboy.
  2. Add 2 lbs of sugar, the lemon juice, and the campden tablets.
  3. Cover loosely and let stand overnight.
  4. Add yeast and nutrient.
  5. Cover with a fermentation trap, and put it someplace where the foam can go over.
  6. After a few days, when the fermentation slows down, add the rest of the sugar.
  7. Again, wait for it to slow a bit, then top up with water.
  8. Rack after 2 months, and then bottle when clear.
  9. Stabilize, bottle and age as you normally would.

According to the submitter of this recipe, they’ve had problems with getting this wine to clear completely, but it gets pretty close.
